Ingredients

  • 1 Pullet
  • 2 Dried lime peels
  • 1 Tsp of sugar
  • 1 Tsp of spice
  • ½ Tsp of clove’s bud
  • 2 Tsp of grinded ginger
  • 1 Tsp of salt
  • 1Tbsp wine
  • Cooking oil

Preparation

  1. Clean the pullet thoroughly using salt and water, then allow it to dry completely.
  2. Marinate the pullet with sugar, spices, and ginger for at least 3 hours to enhance the flavor.
  3. In a large pot, combine 3 liters of water, lime peels, cloves, salt, and sugar. Bring the mixture to a heat and simmer for about 20 minutes.
  4. Add the pullet into the pot and boil for 20 to 25 minutes until cooked through, then remove and allow it to dry.
  5. Heat cooking oil in a pan and fry the pullet until the skin becomes a golden yellow color.
  6. Chop the fried pullet into serving pieces and arrange them on a dish.
  7. For serving: pair the dish with cooked rice or vermicelli and a side of fish sauce.
