Ingredients

  • ½ Pound chicken drumsticks
  • ½ Pound shelled green papaya
  • ½ Pound sliced medium - mature papaya
  • 1 Sliced cucumber
  • 1 Sliced tomato
  • 1 Pound bean sprouts washed clean
  • 2 Tsp of salt
  • 2 Tbsp of sugar
  • 2 Cups of vinegar
  • Cooking oil

Preparation

  1. Boil the chicken drumsticks until fully cooked, then remove the bones.
  2. Slice green papaya and soak it in a mixture of vinegar, salt, and sugar for 1 hour to enhance its flavor and texture.
  3. Cut cucumber, tomato, and ripe papaya into small pieces. Combine these with bean sprouts and a dressing made from vinegar, salt, sugar, and cooking oil.
  4. Transfer the prepared mixture and the boneless chicken to a serving dish.
  5. Before serving, sprinkle with additional vinegar, salt, sugar, and a drizzle of olive oil. Stir well to combine.
