Vietnamese Braised Chicken with Mushroom

Ingredients
- 2 pound chicken
- 1 cup white mushroom, shiitake mushroom or dried Chinese mushroom
- ½ tsp of pepper
- 1 tsp salt
- 3 tbsp corn starch
- 2 scallions
- Cooking oil
Preparation
- Chop chicken into bite-sized pieces and season with salt and pepper.
- Clean fresh mushrooms and finely chop them. For enhanced flavor, consider using dried mushrooms, which can be easily found at most Asian grocery stores.
- Heat cooking oil in a skillet, sauté scallions until fragrant, then add the chicken. Stir-fry until the chicken is thoroughly cooked.
- Add water to the pan and incorporate the chopped mushrooms. Allow the mixture to simmer for 20 minutes, letting the flavors meld together.
- Mix cornstarch with a small amount of water in a bowl, then pour it into the pan. Stir consistently until the sauce reaches the desired thickness.
Serving suggestion: Serve hot alongside crusty bread and a fresh salad.
