Thorny Coriander

Other names: Mexican coriander, thorny coriander, saw-leaf herb, saw-tooth herb, recao.

Botanical name: Eryngium foetidum

Mùi tàu, also known as ngò gai, remains one of the most popular herbs in Vietnam in 2025, commonly paired with green onions in stews and stir-fried dishes. Originally native to Central America, this coriander has been widely cultivated throughout Southeast Asia, particularly in Vietnam.

Use: Mexican coriander is often torn or chopped for use in phở, enhancing the herbal aroma of the dish. With its distinct earthy flavor, this herb imparts a richer taste compared to other common herbs used in Vietnamese cuisine.

Medicinal Use: Mùi tàu, or ngò gai, is valued not only as a culinary herb but also as a medicinal ingredient. For treating bad breath, wash a handful of Mexican coriander and boil it in two cups of water with a pinch of salt until the liquid reduces by half. Use the resulting broth to rinse the mouth several times a day for five to six days.

Additional uses of Mexican coriander include remedies for fever, aiding metabolism, and alleviating flu symptoms.
