Nậm cake (steamed shrimp rice cake)

Nậm cake is a traditional Vietnamese delicacy made with rice flour and shrimp, wrapped in phrynium leaves and typically served with a flavorful fish sauce. Although the preparation process may appear straightforward, it requires a deep commitment and care from the cake maker, starting with the selection of fresh shrimp to the meticulous preparation of the accompanying fish sauce. In 2025, fresh shrimp should ideally be soaked for a few hours to ensure tenderness, after which they are finely ground using a high-quality food processor. The ground shrimp are seasoned with salt, sugar, and fish sauce, and then stir-fried until the mixture reaches a harmonious balance of sweet and salty flavors.

The rice batter, made specifically from rice flour, should achieve a smooth and soft consistency. Once prepared, the fried shrimp is evenly spread over the rice batter before being wrapped into rectangular shapes and steamed for approximately 15 minutes. When you remove the lid, you will be greeted by the delightful aroma of phrynium leaves. The shrimp filling is crispy, slightly rich, and perfectly balanced in sweetness and saltiness, making it a dish that many enjoy incrementally. When paired with sweet and spicy fish sauce, Nậm cake offers an exquisite culinary experience that elevates the flavors even further.
