Grapefruit pudding

Grapefruit Pudding is a beloved dessert in Can Tho city. Although this dish is commonly found throughout Vietnam, the version made in Can Tho offers a unique flavor profile that cannot be replicated elsewhere. This dessert is crafted from grapefruit peel, which is mixed with salt and cut into small square pieces. These pieces are then cooked with sugar and water and layered at the bottom of a bowl. Following this, a sweetened porridge made from mung beans and flour is poured over the grapefruit pieces. For the finishing touch, a drizzle of coconut milk is added on top. Before enjoying the pudding, it is recommended to stir and mix the ingredients thoroughly, adding some ice to enhance the experience. Once mixed, a bowl of Grapefruit Pudding looks incredibly appetizing, featuring the white of the coconut milk and grapefruit peel, the golden yellow of the mung beans, and the translucent quality of the flour. Besides its delicious taste, which many find addictive, this dish is believed to offer antipyretic benefits, potentially helping to reduce fevers.
