To prepare this dish, gather the necessary ingredients: baby clams, Chinese squash, green onions, tomatoes, fresh dill, fish sauce, salt, and pepper. Rinse the baby clams several times under cold water to remove any dirt, then boil them in a deep skillet for approximately 15 minutes. Wash all vegetables before cooking; finely chop the tomatoes, and peel and slice the Chinese squash into rounds.
Cooking:
In a large skillet, heat oil over medium heat and sauté the chopped green onions until they are fragrant. Add the boiled baby clams and stir until they shrink and are well mixed. Next, pour in the clam broth along with the sliced Chinese squash and fish sauce. Bring the mixture to a boil and let it cook for about 15 minutes. Finally, stir in fresh dill just before serving. Enjoy the “canh hen” hot, accompanied by pickled eggplant and steamed rice for a delicious meal.
