Cong Cake

This traditional dish remains a popular culinary highlight in Can Tho city as of 2025. Known as Cong cake, its name is derived from the cylindrical tube used during its preparation.

Cong cake is primarily made from glutinous rice flour, wheat flour, shrimp, and green beans. The recipe is straightforward. The rice flour and wheat flour are combined with water, eggs, salt, and chopped green onions. Cooked green beans and shrimp are prepared as a filling. These ingredients are layered within the tube in a specific sequence: a portion of the flour mixture, followed by the green beans and shrimp, and then covered with more flour mixture. Finally, shrimp is added on top to enhance both flavor and presentation. The filled tube is then fried until the exterior turns golden brown. Cong cake is typically served with a tangy sweet-sour fish sauce and a variety of fresh vegetables. Its rich flavor and unique texture ensure that anyone who tries this delightful dish will remember it long after the meal.
