Roast Pork continues to be a hallmark dish of Lang Son and remains a cherished gift exchanged between families during weddings among the Tay and Nung ethnic groups. Unique to Lang Son, this roast pork is prepared using a special leaf known as Mac Mat. These leaves, which flourish on the rocky mountains of the region, impart a distinctive aroma and a delightful blend of sweet and sour flavors. The traditional cooking process involves selecting a pig weighing between 25kg and 50kg. After the pig is prepared, the internal organs are removed, and the inner cavity is dried. The cook then fills the stomach with Mac Mat Leaves and an array of spices before stitching it closed. A long bamboo stick is used to suspend the pig over hot charcoal, and it is continually rotated. However, this task is too labor-intensive for one person; usually, two or three individuals share the duty of spinning while applying a unique blend of honey and spices to the pig, ensuring the skin achieves a perfect crispness. Additionally, it's vital to use a towel to absorb the fat that renders during roasting to prevent it from dripping onto the coals.
The roasting process typically takes around three hours, though this may vary based on the size and shape of the pig. To determine if the meat is fully cooked, cooks often poke the skin with a stick; if dark juices flow, the roast is ready for serving!
Once complete, the roast pork gleams with a rich yellow hue and exudes an irresistible aroma from both the meat and the Mac Mat Leaves.
