Most foreign travelers know about “pho” – Vietnam’s most famous rice noodle dish. However, you might be surprised to learn about “pho cuon” – a delicious roll version of the traditional pho, often served as a spring roll. This unique creation has gained popularity across the country in recent years.
Making “pho cuon” is quite simple. Suppliers provide large rice paper sheets, resembling rolls of cloth. Chefs cut the rice pastry into rectangular pieces measuring approximately 10cm x 15cm. They then add slices of sautéed beef and an assortment of fresh herbs on top before rolling the pastry into a compact form. Served with a flavorful dipping sauce, this dish is ready to enjoy.
Though “pho cuon” has only been in existence for about a decade, it has quickly become a beloved snack among young people in Hanoi.
Where can you find the best “pho cuon”?
“Pho cuon” was first invented at Hung Ben restaurant in Ngu Xa Village, located near Truc Bach Lake, and it remains one of the finest places to savor this dish in Hanoi. The small alleys along West Lake and Truc Bach Lake may be a bit tricky to navigate, but enjoying “pho cuon” in a calm and serene setting is truly an experience worth having. The dipping sauce is key to the dish’s flavor, and Hung Ben is known for its secret recipe that balances sweetness and acidity perfectly. Occasionally, you can also enjoy “pho cuon” with shrimp or fried eggs. The restaurant also serves crispy fried “pho” as well as “pho” fried with eggs.
