Hoi Cake

Hoi cake remains a beloved delicacy in the daily lives of Binh Dinh’s residents as of 2025. This traditional cake is commonly enjoyed for breakfast, lunch, or dinner by the local community. Despite its popularity, the exact origins and the name "Hoi" remain somewhat mysterious. Some elders suggest that the name derives from the numerous inquiries about the cake’s type when it first appeared; "Hoi" translates to 'to ask' in Vietnamese. Hoi Cakes are produced in various locations across Binh Dinh, with the most renowned versions still being found in Dieu Tri, Tuy Phuoc.

The process of making Hoi cake is akin to noodle production but requires greater precision. Rice is soaked in water until softened, then husked and ground into a fine powder. This powder is steamed and molded into small blocks. While the cake can be consumed immediately upon preparation, it generally lacks flavor at that stage. To enhance its taste, it is frequently paired with oil and sautéed chives, adding a fragrant touch. Additionally, it is commonly served with a dipping sauce made from fish sauce mixed with pepper, sugar, lime juice, and garlic.
